This Slow Cooker Turkey Chili is the ultimate comfort food, combining ground turkey, hearty beans, fresh veggies, and pantry spices. Perfect for meal prep or feeding a hungry crowd!
2 15-ounce cans dark red kidney beansdrained and rinsed
1 15-ounce can pinto beansdrained and rinsed
5large carrotscut into coins
5celery stalkschopped
1yellow onionchopped
2clovesgarlicchopped
1jalapenoseeded and diced
2 28-ounce cans crushed tomatoes in a thick puree
2tablespoonsfresh parsley leaveschopped
1tablespoonchili powder
2teaspoonscumin
1teaspooncayenne pepper
Instructions
Heat olive oil over medium heat in a large skillet. Add ground turkey and season with salt and pepper to taste. Cook turkey until browned, crumbling the meat as it cooks with a spoon or spatula.
While meat is cooking, add beans, carrots, celery, onion, garlic, jalapeno and crushed tomatoes to your slow cooker.
When turkey is done, drain any excess liquid and add meat to the slow cooker.
Add parsley, chili powder, cumin and cayenne pepper to the slow cooker.
Stir to combine ingredients.
Cook on high setting for 5-6 hours or low setting for 8-10 hours.
